Dan is daar dié wat hulle mind gedurige verander of nie kan besluit nie omdat hulle dink daar is altyd iets beter om die draai. (Persoonlik dink ek hulle staan voor in die ry as dit kom by “ons hou nie van mense wat hulle mind change nie). Hulle antwoord gewoonlik op nommer 99 op ‘n uitnodiging en kanseleer op nommer 99.5!!
Kort op hulle hakke is dié wie se planne gedurige deur die geringtste ritsel verander kan word. Hulle reëlings verander ‘n duisend keer en al duisend keer word jy gekontak. Hulle verwag ook gewoonlik dat jy al duisend keer moet inval by hulle planne of vir hulle arrivering moet wag.
Dan is daar dié wat hulle “mind change” sommer net omdat hulle so voel, dié wat dit doen om “spiteful” te wees en dié wat aan die” I change my mind annoniem groep” behoort. Hulle doen dit in alle dele van hulle lewe en doen dit so greeld dat hulle dit nie eers meer agterkom nie!
Daar is ‘n baie spesiale groep – hulle neem ‘n besluit, gewoonlik saam met jou en oor dinge soos finansies, wat julle aan die huis gaan verander (en wanneer), aankope, vakansie ens. en dan “change” hulle hulle “minds” in hulle koppe en hulle vergeet om vir jou te sê. So wanneer jy dan by enige van die bogenoemde datums, aankope ens. kom (en nadat jy alles rondom dit beplan het) word jy dan ingelig dat dinge verander het.
Daar is egter kere wat ‘n mens jou mind maar kan verander soos as die klere wat stunnig by die winkel gelyk het en geroep het “ koop my! Koop my!, by die huis nie meer so stunning lyk nie. (ek weet julle almal doen dit – dalk is daar ‘n ondersteuningsgroep daarvoor ook). Wanneer jy iets hoor daarop regeer en jy besef dat jy oorspronklik verkeerd gehoor het! (kan jou baie rooi gesig los). As jy in die hitte van die oomblik iets se en na die tyd besef dat jy eintlik verkeerd was of dit nie bedoel het nie (ouch! Moeilik om te erken aan die ander persoon, maar tog nodig)
Nou as jy soos ek is – iemand wat vinnig reageer of kwaad raak en dan net so vinnig weer goed raak of vergewe – dan verander jy ook dikwels jou mind. Jy besef dat dit waaroor jy kwaad geraak het dalk glad nie so erg was nie of dalk menslik was. Net soos hierbo is dit egter nie so maklik om te erken nie en dikwels gaan jy nie terug na die persoon en erken dat jy jou :mind gechange” het nie. Jy moet egter! Omdat ek bewus is van hierdie "eienskap" in my, probeer ek my gedagtes verander deur eers te dink en dan te doen of te sê. Dit is soos om ‘n “couch potato” te wees en dan te besluit om die comrades te gaan doen – ‘n lang en pynvolle proses, maar doenbaar as jy jou “mind” daarop sit.
Soms mag vrouens sommer net hulle “mind change” omdat hulle vrouens is, omdat hulle soveel rolle moet vervul en in die woorde van Cyndi Lauper “

Hierdie een kan jy as ‘n vulsel in ‘n pannekoek gebruik en die pannekoeke in die helfte sny en bedien. Dit ka nook op franse brood of sout koekies bedien word.

Potato skin appetizer
Makes 20
Ingredients
· 5 large (1kg in total) unwashed potatoes, scrubbed
· 12 bacon shortcuts, chopped
· 6 green onions, sliced
· 40g butter, melted
· 1 cup grated cheddar cheese
· Sour cream and sweet chilli sauce, to serve
Preheat oven to 180° C. Place potatoes onto middle shelf of oven. Bake for 45 minutes to 1 hour, or until tender (jy kan altyd dit eers vinnig kook en dan net ‘n bietjie bak as jou tyd min is. Heat a non-stick frying pan over medium heat. Cook bacon for 5 minutes. Remove from heat. Stir in half the onions. Preheat grill on medium-high heat. Cut potatoes into quarters, ensuring skin remains intact. Scoop out flesh, leaving a 5mm layer of potato. Place skins onto a baking tray, flesh-side down. Brush with half the butter. Grill for 3 minutes, or until golden. Turn. Brush with remaining butter. Grill for a further 3 minutes, or until golden. Spoon the bacon mixture into skins. Top with cheese. Grill for further 5 minutes, or until cheese is melted. Sprinkle with remaining onions. Serve with sour cream and sweet chilli sauce
Chicken Satay Skewers
Yields 8
Ingredients
· 2 boneless, skinless chicken breast halves, tiny sliced lengthwise into 12 strips
· 1 teaspoon toasted sesame oil
· 1 teaspoon soy sauce
· 1 garlic clove, minced
· ½ teaspoon red-pepper flakes
· Coarse salt and ground pepper
· ¼ cup creamy peanut butter
· 2 tablespoons rice vinegar
· Vegetable oil, for pan
In a bowl, toss chicken with sesame oil, soy sauce, garlic, and ¼ teaspoon of the red-pepper flakes. Season with salt and pepper. Thread each chicken strip lengthwise onto a skewer. Make dipping sauce: In a small bowl, whisk together peanut butter, vinegar, remaining ¼ teaspoon red-pepper flakes, and 2 to 3 tablespoons water. Heat grill pan over high. Working in batches, brush pan with oil, and cook chicken until opaque throughout, 1 and 2 minutes per side. Serve chicken skewers with dipping sauce
Goat-cheese Crostini with Fig Compote
Yield: 24
Ingredients:
· 1 Small baguette (± 225g cut on the diagonal into 24 slices
· 3 tablespoons olive oil
· ½ cup chopped dried figs
· 1 cup dry red wine
· 1 cup dry red wine
· ¼ cut light-brown sugar
· ½ teaspoon fresh thyme leaves plus more for garnish (optional)
· Coarse salt
· 40 g goat cheese (1 small log)
Preheat the grill. Brush both sides of baguette slices with oil; place on baking tray and grill until golden, 1 or 2 minutes per side; set toasts aside. In a small saucepan, combine figs, sugar, wine, thyme, and a pinch of salt. Bring to boil; reduce to a simmer, and cook until thickened, 7 to 9 minutes. Let compote cool to room temperature. Dividing evenly, spread each toast with goat cheese, and top with compote. Garnish with thyme, if desired.
Cocktails
Chocolate Peppermint Cookie Cocktail
Ingredients:
· 22ml Tequila
· 30 ml Peppermint Schnapps
· 22ml Chocolate Liqueur
· 30-40ml cream
· Chocolate syrup and candy canes for garnish
Rim martini glass with chocolate syrup and crushed candy canes. Shake ingredients in a shaker with ice and strain into martini glass.
Sparkling Ginger Daisy Punch
Ingredients:
· 1 cup gin
· 1 cup ginger liqueur
· 1 cup lemon juice
· 1/3 cup grenadine
· ±2 cups Brut Champagne
In a large punchbowl, stir together gin, ginger liqueur, lemon juice, and grenadine. Add large chunks of ice to keep everything chilled. Add the champagne, and stir again. Serve with ladle, and consider keeping a bowl of cherries next to punchbowl for quests to garnish their own drinks!
Strawberry Shag
Ingredients:
· 1 to 2 large sprigs of fresh basil
· ¼ cup Sugared Strawberries with juice
· 28 ml fresh lemon juice
· 44 ml vodka
· 44 ml vodka
· 90-120ml chilled soda water
· Fresh strawberry for garnishing
· Small basil leaf for garnishing
In a cocktail shaker, press the basil and strawberries together with a muddler to release the basil’s flavour. Fill the shaker with ice. Measure in the vodka and lemon juice. Cap and shake vigorously. Pour into a large glass, top with soda water, and stir. Garnish with a strawberry and basil leaf
Flirtini
Ingredients:
· 30ml vodka
· 10 ml apricot liqueur
· 10ml cranberry juice
· 10ml pineapple juice
· Ice cubes
· Champagne
· 1 strawberry for garnish
Place the vodka, apricot liqueur, cranberry juice, pineapple juice and ice cubes in a shaker and shake well. Strain the cocktail into a martini glass and top off with champagne. Garnish with the strawberry.
